Fuul Medammis, petit déjeuner égyptien

Voici une recette égyptienne, en fait c'est le petit déjeuner typique. Parfois le dimanche matin ma mère nous préparait ce plat costaud qui nous réchauffait le coeur. L'odeur du cumin et de la coriande moulus me rappelle mon enfance. Fuul ça veut dire fève, plus précisément la gourgane, grosse et plate avec un oeil noir. Oui, je sais, la recette est en anglais car je prépare un article sur le sujet et présentement je suis un peu trop vache pour le traduire, mais ça viendra, pour l'instant sortez vos dictionnaires et n'hésitez pas à me faire des commentaires.

Fuul Medammis

  • 1 ½ cup dried fava bean, soaked overnight
  • ¼ cup olive oil
  • salt & pepper
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ¼ cup lemon juice
  • 2 garlic cloves, crushed
  • 4 hard-boiled eggs, shelled, cut in half
  • 2 tablespoons parsley, finely chopped
  • 2 medium tomatoes, sliced

Cover fava beans with water in large pot. Cook over medium heat for 45 minutes or until very tender. Drain beans, and place in mixing bowl; add olive oil, salt, pepper, ground coriander, cumin, lemon juice and garlic and mix until beans are slightly crushed. Garnish with egg, parsley, tomatoes. Serve with fresh flat bread and tahina sauce.

Tahina Sauce

  • 3\4 cup tahina (sesame paste)
  • ½ cup of water
  • ¼ cup lemon juice
  • ½ teaspoon ground cumin
  • 1 garlic clove, crushed
  • salt

To tahina, add water gradually stirring constantly. Add cumin, lemon juice, garlic, salt and stir thoroughly until well blended and smooth.
